Beef & Broccoli

Ingredients

¼ cup coconut amino, divided

1 teaspoon garlic, minced and divided

1 teaspoon fresh ginger, minced and divided

8 oz. beef, sliced thinly

1 ½ tablespoon avocado oil, divided

2 ½ cups broccoli, sliced into florets

¼ cup low sodium beef stock

½ teaspoon sesame oil

Salt to taste

Sesame seeds

Green onion, chopped

Method

In a bowl, mix the one tablespoon coconut amino with half of the ginger and garlic.

Marinate the beef into this mixture for 1 hour.

Cover with foil and place in the refrigerator.

Put 1 tablespoon oil in a pan over medium heat.

Add the broccoli and cook for 3 minutes.

Add the remaining ginger and garlic.

Cook for 1 minute.

Reduce the heat.

Cover the pan with its lid.

Cook until the broccoli is tender but still a little crunchy.

Transfer the broccoli to a platter.

Increase the heat and add the remaining oil.

Add the beef and cook for 3 minutes.

Put the broccoli back.

In a bowl, mix the remaining coconut amino, broth and sesame oil.

Pour into the pan.

Cook until the sauce has thickened.

Season with salt.

Garnish with sesame seeds and green onion.

Ingredients

¼ cup avocado oil

1 white onion, chopped

2 teaspoons garlic, minced

3 lb. beef brisket, fat trimmed and sliced into bite size pieces

Salt and pepper to taste

2 teaspoons ground thyme

1 ½ cups beef broth

2 tablespoons apple cider vinegar

16 oz. fresh mushrooms, sliced

¾ cup sour cream

¼ cup mayonnaise

1 ½ teaspoon xanthan gum

Method

Place your pan over medium heat.

Add the oil, onion and garlic.

Sauté for 3 minutes.

Add the beef.

Season with salt, pepper and thyme.

Cook for 8 minutes, stirring frequently.

Reduce heat and add beef broth and vinegar.

Simmer for 30 minutes.

Add mushrooms and cover the pan.

Simmer for 1 hour and 30 minutes.

Remove the pan from the stove.

Stir in the mayonnaise and sour cream.

Gradually stir in the xanthan gum until the sauce has thickened.

Cover the pan and let sit for 10 minutes before serving.

Garlic Butter Steak

Ingredients

2 rib eye steaks, trimmed

1 ½ tablespoons olive oil, divided

Salt and pepper to taste

2 tablespoons butter

Method
