Drizzle some olive oil on the beets and sprinkle pepper and salt on them.

Wrap them in foil, place them on a baking tray and roast them for about 15 to 20 minutes.

When they are sufficiently cool, put them under running water and slide their skins off by hand.

Chop them into half-inch cubes.
